New composting initiatives turn Danforth Campus food waste into fertilizer

WUSTL diners can toss a used napkin and food scraps into a campus compost bin, and 4-6 months later, their trash might be feeding the tulips in front of Brookings Hall. With the help of the WUSTL community, WUSTL Dining Services and the Office of Sustainability are working to turn more food scraps and trash into fertilizer through composting.

WUSTL Dining Services to implement animal welfare policies

Bon Appetit, the food service company that manages WUSTL Dining Services, has announced its new farm animal welfare policy. The changes will affect meat, poultry and eggs served at WUSTL Dining Services locations. Under the new standards, Bon Appetit will employ the food service industry’s most comprehensive farm animal welfare policy to date, says Nadeem Siddiqui, director of WUSTL Dining Services.

WUSTL Dining Services emphasizes serving local food

If you’ve sampled trout, milk and green beans this fall from a WUSTL Dining Services eatery, chances are, you’ve eaten local. Between 18 percent and 20 percent of food served by WUSTL Dining Services comes from local sources, says Jill Duncan, dining services marketing director. “The exact number fluctuates, depending on the time of year,” she says. No matter what the season, Dining Services is making a significant effort to give WUSTL diners more local dining choices, Duncan says.

Weekday $5 lunch specials return to Bear’s Den

Weekday $5 lunch specials are returning to the Bear’s Den on the South 40 this academic year. The specials, which are offered at each Bear’s Den eatery open during lunch, are available from 11 a.m.-2 p.m. Monday-Friday. New this year is a $5 special at Paws & Go: a cup of soup, half sandwich and a fountain drink.

Eat Local Challenge meals offered on Danforth Campus Sept. 27

Danforth Campus eateries will offer meals made entirely of local food — with the exception of salt — Tuesday, Sept. 27, as part of WUSTL Dining Services’ Eat Local Challenge. Ingredients for Eat Local Challenge meals will come from farmers and artisans within 150 miles of WUSTL.

Events celebrate week of Earth Day

WUSTL will celebrate Earth Day Friday, April 22, and many sustainability-themed events are planned for the week of April 18-23 throughout the Danforth and Medical campuses, including an owl walk, bike ride, Low-Carbon Cook-Off and Green Cup awards ceremony.

WUSTL Dining Services introduces reusable to-go box

WUSTL Dining Services has introduced a reusable to-go box, which can be used at any WUSTL Dining Services location on the Danforth Campus. The box, which is available for $3, allows faculty, staff and students to take their meal to-go without using a cardboard to-go box. Diners who use the box receive a 25-cent discount on each meal purchased with the box.

Stanley’s opens for business
